Koval, the first legal distillery since Prohibition, based in Chicago, opened in 2008.
Its founders are Robert and Sonat Birnecker, formerly secretary of the Austrian embassy in Washington (Robert) and a lecturer in Jewish customs and culture (Sonat). The distillery distills from organically grown grains supplied by a nearby cooperative. Koval Rye is distilled from 100% rye and aged for an average of 18-24 months in heavily charred small 30-gallon oak barrels. All Koval whiskeys are offered in single barrel versions, so they differ slightly from each other.
Aroma : alcohol, rye bread, dill, nutmeg, ginger, mint leaf and a trace of apples and pears.
Taste: light, sweet and spicy, sweet tea, honey, ginger, cinnamon, pine needles, traces of tobacco and anise.
Finish: not too long, with notes of pepper, cinnamon and ginger.
