Midleton Dair Ghaelach is the first Irish whiskey to be finished in fresh Irish oak barrels.
In April 2012, 10 oak trees were felled from the Grinsell Forest, Ballaghtobain Estate in Co. Kilkenny, and 9 of them were taken to Spain (the tenth was rejected because of twisted grain). The staves were air-dried for 15 months, and then the finished barrels (48 in total) were roasted for 48 hours and sent to the Midleton Distillery, where they were filled for an additional 10 months with single pot still whiskey aged for 15 to 22 years in American white oak barrels. (The tree number is printed on the whiskey labels.) “Dair Ghaelach” is Gaelic for “Irish oak.” It is more porous than its American and Spanish cousins, and is also higher in vanillin.
Nose: very rich, vanilla, honey, milkshakes, forest floor, peaches, bananas, pineapples, cinnamon, coconut flakes and toasted oak.
Palate : beautifully balanced, vanilla cream, caramel, milk chocolate, apples, peaches, bananas, cinnamon, cloves, a pinch of nutmeg and toasted oak.
Finish : very long, creamy sweetness balanced by spicy notes and subtle oak bitterness.
