Glenallachie 21yo Cask Strength for the third time

Glenallachie distillery and Billy Walker, who heads it, are not slowing down in offering whisky lovers more and more new editions.
The third edition of the Glenallachie 21yo Cask Strength. Whisky bottled at natural strength, without dilution (51.5% vol.), is a marriage of the contents of three puncheon barrels, seasoned Pedro Ximénez sherry. It was bottled bypassing cold filtration, without the use of colored caramel.
New edition Glenallachie 21yo Cask Strength offers in the aroma, according to the producer, accents of dark grapes, raisins, dark chocolate with orange, coffee, compote fruit and sugar syrup. In the taste, we should find notes of heather honey, cocoa sprinkled truffles, sultanas, espresso coffee, currant mix, brandy buttercream and ginger cookies in it.
The three casks from which the described edition of whisky was collated were personally selected by Billy Walker from more than 50,000 casks maturing in warehouses on the Glenallachie distillery site. Walker says each is carefully monitored, and the best of the currently available whiskies are selected to compile the next editions of the whisky on offer.
The contents of the three barrels were enough to fill 2,400 bottles, which will be available any day now in specialty strong liquor stores at a price equivalent to £275.
Glenallachie is a relatively young distillery from Speyside. It was founded in 1967 and for most of its activity has provided the raw material for blended whisky compilation. It had to wait for a significant debut as a single malt whisky until The Glenallachie Consortium took it over from its previous owner, Pernod Ricard, in 2017. The consortium was headed by Billy Walker, who immediately set about inventorying the warehouses and selecting the best casks from which he put together the distillery's first-ever basic single malt whisky offering. It hit the market already in 2018, while at the same time some of the other distillates went into new barrels for additional maturation, known as wood finishing. This year, Billy Walker is celebrating 50 years of work in the whisky industry, which was honored with three special editions of whisky. These were Glenallachie 16yo Past Edition, Glenallachie 16yo Present Edition and Glenallachie 4yo Future Edition.
Glenallachie Distillery is located a few kilometers from the village of Aberlour, at the foot of the hills, the highest peak of which is Benrinnes. In its immediate vicinity are the Aberlour, Craigellachie, Macallan, Benrinnes, Dailuaine and Dalmunach distilleries. As Glenallachie is located in the heart of Speyside, the whisky-producing region with the highest concentration of distilleries, at least two dozen others can be found within a dozen kilometers of it, including such important and well-known distilleries as Glenfiddich, Balvenie, Cardhu, Mortlach, Glenfarclas, Knockando, Tamdhu, as well as Glenlivet, Glenrothes, Glen Grant. Also located in relatively close proximity to Glenallachie are three distilleries that were managed by Billy Walker earlier and promoted by him into undisputed leaders of the single malt whisky market, namely Benriach, Glenglassaugh and Glendronach. A few years ago, the distillery became interested in the American company Brown Forman, the interest turned into a deal, and the deal was finalized in 2016. Since then, Glendronach, Benriach and Glenglassaugh have operated under the banners of the new owner.
