Dalmore Cask Curation Series - The Sherry Edition

Dalmore, one of the prestigious whisky brands in the Whyte & MacKay (Emperador Inc) portfolio, is releasing the first three whiskies as part of a new series of.
Cask Curation Series is a collection in which limited editions of Dalmore will appear on the market every year, with the theme of cask. In the case of the debut three, it will be a sherry cask, or rather casks - three different types of sherry casks designed to show how the different types of sherry shape the whisky.
The first batch of whisky was prepared in cooperation with the Spanish company González Byass, which supplies Dalmore with barrels of this fine fortified wine on an exclusive basis. Business ties between Dalmore and González Byass go back to the early 20th century. Collaboration during the preparation of the first edition of the Cask Curation Series was by no means limited to supplying Dalmore with casks. González Byass Antonio Flores, who is now managing González, and his daughter Silvia Flores were responsible for preparing the barrels, but also worked with Richard Paterson and Gregg Glass of Dalmore on their selection for the Cask Curation Series.

The Dalmore 26yo (48.2% vol.), whisky matured in American white oak bourbon barrels, finished in cask No. 4, oloroso sherry vintage 2002. In the aroma of orange blossom honey, apricots, Madagascar vanilla and cocoa. Flavors include raisins, tangerines, frosted cherry cake and sugared almonds. On the finish fresh brioche, lightly roasted coffee, candied ginger and vanilla.
The Dalmore 28yo (55.3% vol.), a whisky matured in American white oak bourbon barrels, finished in cask No. 73, an extremely rare 30-year-old Matusalem sherry cask. In the aroma of ripe red fruits, manuka honey, licorice and carambola. Taste of sherry-soaked raisins, orange marmalade, marzipan and licorice. On the finish cherries, molasses, dark chocolate and cinnamon bark.
The Dalmore 43yo (46.8% vol.), a whiskey matured in American white oak bourbon barrels and subjected to a barrel finish in cask No. 1, an extremely rare 30-year-old Apostles sherry cask. In the aroma of honey, roasted chestnuts, raisins and Seville oranges. Taste of Madagascar vanilla, dark forest fruits, crushed almonds and dark chocolate. On the finish fresh brioche, grilled pineapple, red oranges and sweet cinnamon.
All three whiskies included in the set were bottled in their natural form - without dilution, caramel coloring, or cold filtering. Each of the 150 sets prepared for sale is offered in a special leather case handcrafted by artisans in Florence. The purchase of a single set is an expense of $37,500 US.
The Sherry Edition, which has just debuted, is the first of four to be released once a year. The second edition, planned for 2024, will be devoted to the influence of port on whisky maturation and will be prepared in cooperation with a well-known producer of this Portuguese wine. The other two editions, scheduled for release in 2025 and 2026, will also be based on collaborations with well-known and recognized wine and spirit producers, but details of them will be made public at a later date.
The Dalmore distillery is one of four Scotch whisky producers owned by Whyte & Mackay, part of the Philippine liquor giant Emperador. The other three are Fettercairn, Jura and Tamnavulin. Founded in 1839, Dalmore is located in northeastern Scotland, on the shores of the Cromarty Firth bay. The distillery operates 8 alembics with distinctive flat tops, and the second-distillation alembics are equipped with water jackets on the necks to increase reflux. The unusual horizontal arrangement of modern shell condensers is designed to mimic the effect of traditional coil condensers. As you can easily guess, the whisky produced here is used in the compilation of Whyte & Mackay blends, but the share of Dalmore single malt whisky bottlings in the distillery's total production is steadily increasing. Its maximum capacity is about 4.5 million liters of pure alcohol per year.
