Jim Beam whiskey, bourbon and rye are produced at two Kentucky distilleries, in Clermont and Boston, the latter of which has been officially called Booker Noe Distillery since 2015. The term “Devil’s Cut” refers to the whiskey left in the staves of a barrel after it has been emptied, and with this edition, Jim Beam proves that you can outsmart the devil. Right after the whiskey is decanted from the barrels, they are filled with a small amount of water and placed in a special “spinner,” and the rotational motion rinses out any remaining bourbon. This “extract” is then added to the next batch before bottling.
Nose: lots of oak, pine needles, caramel, toffee, vanilla, grilled corn on the cob, pepper, cloves, roasted nuts and a hint of cocoa.
Taste: roasted nuts, cinnamon, caramel, dried plums, a touch of vanilla and pepper, a trace of leather and a lot of oak bitterness.
Finish : medium long, strongly oaky, with notes of caramel, cinnamon, ginger and a bit of leather.
