The Macallan 12 Year Old Sherry Oak Cask is considered a classic in the brand’s offering, as the series was the first The Macallan range to mature its whisky exclusively in sherry casks. This approach has been the foundation of the distillery’s distinctive, traditional flavour profile. This single malt spends 12 years in Spanish oak casks that have previously been seasoned with Olaroso sherry. The process begins with the preparation of the casks: after being filled with sherry in Spain, they are transported to Scotland for many years of maturation. The Macallan only uses first-fill casks, which allows for the maximum intensity of the sherry’s aromas and flavours, such as dried fruit, spice and chocolate.
The main difference between the Sherry Oak Cask and Double Cask lines is the choice of casks. Sherry Oak matures exclusively in Spanish oak casks seasoned with sherry, which gives it a distinctive, deep character. Double Cask, on the other hand, combines European and American oak casks (both seasoned with sherry), which softens the flavour profile, introducing more subtle notes.

Palate : mild, raisins, dried apricots and figs, black cherries, orange jam, caramel, milk chocolate, notes of leather and oak
Finish: quite long, with notes of dried fruit, cocoa powder, orange peel, a touch of pepper and oak
