The Macallan 18 Year Old Sherry Oak Cask is considered a classic in The Macallan’s portfolio, as the Oak Cask series was The Macallan’s first project to mature its whisky in sherry casks, which has become the foundation of the distillery’s traditional flavour profile. The whisky matures for 18 years exclusively in Spanish oak casks that have previously been seasoned with Oloroso Sherry. This process begins with the preparation of the casks: after filling them with Sherry in Spain, they are transported to Scotland, where they are used for many years of maturation of the single malt.
The Macallan uses only first-fill casks, which allows for the Sherry’s influence to be fully expressed, giving the whisky intense notes of dried fruit, spice and chocolate. One of the main differences between the Oak Cask and Double Cask series is the type of casks used: the former matures only in Spanish oak seasoned with sherry, while the latter combines European and American oak. It is worth noting that The Macallan has developed the Double Cask range to offer a milder, more versatile style, contrasting with the more intense versions in the Oak Cask series.
