Baker’s Bourbon was introduced in 1992, along with Knob Creek and Basil Hayden’s, as part of the original Jim Beam’s Small-batch Collection.
The whiskey is named after Baker Beam, cousin of Booker Noe, who started working at Clermont Distillery as a watchman and retired as distiller. The label bears Baker’s statement: “my bourbon follows Beam family tradition of putting our best secrets inside the bottle, not here on the label; I have distilled six generations of bourbon skill into this bottle, that’s a lot of good secrets”. Baker’s, originally small-batch bourbon, since 2019 has been offered as single barrel. It is aged for seven years and bottled at 107 proof (Baker Beam’s preferable strength).
Nose: rich, burnt sugar, vanilla, roasted coffee beans, dried apricots, orange peel, cinnamon, clove, touch of mint, and pretty strong oaky notes.
Palate: caramel, toffee, vanilla custard, cherries, plums, fennel, cinnamon, clove, black pepper, licorice, hints of leather and charred oak.
Finish: pretty long, with notes of vanilla, caramel, roasted almonds, prunes, cinnamon, pepper and charred oak.
