St. George Spirits, founded in 1982 by Jörg Rupf in Alameda, California, is one of the oldest American craft distilleries.
Initially, it produced fruit brandies and Hangar One vodka (the rights to which were purchased in 2010 by Proximo Spirits), and began distilling single malt whiskey in 1997. St. George Whiskey debuted three years later, and its standard version hits the market in limited editions consisting of 3,000-4,000 bottles. The St. George Baller presented here is a whiskey from a slightly different story - distilled from 100% American barley, it was aged for three years in bourbon and French red wine barrels, then finished in Umeshu barrels, a traditional Japanese plum liqueur. This liqueur is also produced by St. George Spirits from ume plums from California.
Nose: barley malt, cherries, plums, apricots, dried mango, honeydew melon, caramel, vanilla, coffee beans and charred oak.
Palate : consistent with the aroma, red apples, plums, dried apricots and mango, cantaloupe, lemon peel, honey, vanilla, graham crackers, traces of leather and oak.
Finish: medium long, with notes of plums, baked apples, tropical fruits, vanilla, cinnamon and the breath of a dying campfire.
