The patron of the whiskey presented here is the Baptist pastor, Elijah Craig (1743-1808), often called the "father of bourbon".
The reverend left Virginia to avoid persecution by the Church of England and settled in Lebanon (later Georgetown), Kentucky. There, he spread the faith, distilled whiskey and produced paper. Giving the clergyman full credit for the creation of bourbon would be a bit of an exaggeration, as he only distilled in Georgetown, and that town was never in Bourbon County. Today, Elijah Craig is a bourbon from the Heaven Hill Distillery portfolio distilled according to the formula: 75% corn, 13% rye and 12% barley malt. The Barrel Proof version debuted in the fall of 2013 and is released once a quarter. The edition presented here hit the market in September 2021, bottled at 120.2 proof (60.2% abv).
Nose : lots of charred oak, vanilla, caramel, maple syrup, roasted nuts, cinnamon, nutmeg, notes of tobacco and leather.
Palate : caramel, honey, milk chocolate, vanilla, wholemeal toast, dried plums, cinnamon, cloves, notes of tobacco and charred oak.
Finish : quite long, with notes of caramel, toffee, roasted nuts, cinnamon, pepper, tobacco and oak.
