Signatory Vintage, founded in 1988 by Andrew and Brian Symington, is a leading independent publisher and distributor of whisky.
Few people remember that Symington started with just £100,000 and nearly went bankrupt several times in the first five years of operation. The name "Signatory" means Signatory and Symington originally intended to hire someone famous to sign each edition. The first cask of whisky bottled by Signatory was Glenlivet 1968, but before the company found the right signatory, there was no trace of the whisky. The Port Ellen presented here, distilled on 7 September 1978, was aged in cask no. 5352 and bottled at cask strength (55.3% abv) on 26 July 2002, in a limited edition of 252 bottles.
Nose : slightly subdued, peat smoke, camphor, sea salt, pears, bananas, orange peel, cantaloupe, a handful of fresh herbs, notes of tobacco and oak.
Palate : smoky and spicy, herbal blend, white pepper, cinnamon, licorice, apples, pears, banana cake, caramel, toffee, notes of hay, leather and oak.
Finish: fairly long, with notes of peat smoke, grilled vegetables, mixed herbs, licorice, white pepper, toffee and oak.
