Aultmore Distillery was built in 1896 by the owner of the Benrinnes Distillery, Alexander Edward.
Its name translates from Gaelic to "Great Stream". In 1923, Edward sold Aultmore to John Dewar & Sons, which in turn became part of DCL two years later. In 1998, DCL's successor, Diageo, was forced to divest itself of the Dewar's brand, and the potential buyer, Bacardi Ltd, is said to have refused to negotiate if Aultmore were to be excluded from the contract. Today, the distillery has two pairs of stills and produces over 3 million litres of spirit per year, most of which goes into Dewar's blends. Distilled in July 2006, the whisky presented here spent 12 years in a refilled hogshead cask, DL 12732, and was bottled as part of Douglas Laing's Old Particular in September 2018 in an edition of 329 bottles.
Aroma: barley malt, green apples, lemon peel, gooseberries, mirabelle plums, vanilla, coconut water, notes of hay and toasted oak.
Palate : breakfast cereal, vanilla, caramel, licorice, oranges, grapes, lemon jam, butter cookies, white pepper, ginger and oak.
Finish: medium long, quite spicy, with notes of zesty orange, vanilla, cinnamon, white pepper and oak.
