Highland Park is one of two distilleries distilling in Orkney today.
Equipped with two pairs of stills, it produces almost 2.5 million liters of distillate annually. In the last decade, the popularity of the Highland Park single malt has grown significantly, reaching sales of over 2.2 million bottles in 2019. Highland Park 12 years old has been the distillery's calling card for years, but the Hjärta presented here differs from the standard version. The whisky was blended with a 20% higher share of first-fill sherry casks and bottled at 58.1% abv. Its name comes from the Norwegian language and means "heart", also emphasizing the connection of Orkney with the Vikings. Highland Park Hjärta was released in 2009 to celebrate the opening of the visitor center and was available only at the distillery. The edition consisted of 3,924 bottles.
Nose: strong sherry notes, heather honey, mocha, orange peel, black cherries, plums, raisins, tobacco, leather sofa, peat smoke and a fleeting trace of sulfur.
Palate : rich, vanilla cream, honey, black cherries, plums, blood oranges, blackberries, coconut flakes, coffee liqueur, white pepper, notes of tobacco, oak and peat.
Finish: quite long, with notes of dark berries, honey, licorice, white pepper, herbal mix and peat smoke.
