Most whisky producers, including of course independent publishers, celebrated the new millennium with commemorative limited editions.
As a rule, these were quite expensive editions of old whisky offered in a rich presentation. The Signatory Vintage company did not quite follow a similar path, preparing excellent, although relatively young, but at the same time carefully selected whiskies. One of them was the Highland Park presented here, a whisky distilled on November 23, 1988 and aged in a sherry butt cask no. 11737 for over 10 years. The millennium edition hit the market on August 28, 1999 in an edition of 435 1.5-liter bottles.
Aroma : delicate notes of sherry, barley malt, milk chocolate, honey, raisins and sultanas, apricots, walnuts, green tea, fresh hay, notes of peat and oak.
Palate: subtly smoky, toffee, heather honey, vanilla, salted caramel, oranges, apricots, plums, milk chocolate, a pinch of white pepper, traces of oak and pine needles.
Finish : quite long, slightly nutty, with notes of honey, caramel, orange jam, chocolate, a hint of pepper and a fleeting trace of smoke.
