In summer 2021, Tomatin Distillery announced the “French Collection” series, consisting of four whiskies finished in barrels from France: Monbazillac, Sauternes, Rivesaltes and Cognac.
The whisky presented here was distilled on 19 September 2008 and aged in refill casks before being added to Sauternes casks on 13 July 2017. Sauternes is a top-class sweet wine produced in Graves (part of the Bordeaux region) from noble rot (botrytis cinerea)-affected Sémillon, Sauvignon Blanc and Muscadelle grapes. Once Scotland’s largest malt distillery, Tomatin now has a capacity of 5 million litres of spirit per year. In 2020, the brand sold more than 750,000 bottles.
Nose: barley malt, dried apricots, peaches, ripe apples, grilled vegetables, caramel, honey, notes of potpourri and wax.
Palate : honey, vanilla, peaches, apricots, cherries, coconut flakes, cappuccino, candied ginger, a touch of cinnamon and toasted oak.
Finish : medium long, sweet, with notes of apricot, orange peel, honey, vanilla, ginger and oak.
