In the 1990s, The Macallan was often referred to as the Rolls-Royce of single malt whiskies.
The distillery placed great emphasis on the quality of the barrels, ordering them from coopers in Jerez, then renting them to bodegas producing Oloroso sherry for a period of two to three years. After this period, the barrels were transported in their entirety to Scotland. The basic editions of The Macallan were made from 70% distillates aged in first-fill barrels and 30% second-fill. The Macallan Cask Strength, the so-called Red Label, was available only on the American market at the beginning of the new century. The whisky was bottled without an age statement, although the distillery claimed that the maturation lasted from 10 to 12 years, of course only in Oloroso sherry barrels.
Nose : lots of sherry, dark chocolate, hazelnuts, oranges, plums, raisins, a bit of cinnamon and cloves, a hint of pepper and a trace of gunpowder.
Taste : powerful barley malt, strong sherry notes, dark chocolate, toffee, honey, almonds, sweet dried fruit, candied ginger and a pinch of pepper.
Finish : long, with notes of sherry, dark chocolate, orange peel, almonds and oak.
