Kilchoman Distillery has been producing whisky since 2005. The popularity it experienced over the next decade encouraged the owners to double production capacity in 2018 to 460,000 litres per year.
Kilchoman is one of a handful of distilleries in Scotland that malt barley, although its own malting plant provides about 25% of its needs. Saligo Bay is named after a rocky bay on the island’s west coast. The whisky debuted in 2016 at Travel Retail and went into general distribution five years later. It is a blend of spirits aged in bourbon barrels for at least five years and bottled at 46% abv.
Aroma: sweet-smoky, sea breeze, damp sand, iodine, vanilla, honey, baked apples, coconut flakes, roasted peanuts and traces of ash.
Palate: slightly alcoholic, peat smoke, apples, gooseberries, mirabelle jam, lemon peel, toffee, vanilla and a bit of oak.
Finish : medium long, with notes of peat smoke, vanilla salt, lemon peel, a pinch of pepper, ash and oak.
