Slyrs Distillery is located in Bavaria, but its name has Celtic-Scottish roots.
In 779, five monks from Scotland and Ireland built a monastery in Schliersee, Bavaria, and named it Slyrs (the pronunciation of “Slyrs” is almost identical to “Schliersee”). In 1999, Florian Stetter began distilling whiskey at his family distillery. It debuted in 2002 as Slyrs Whisky in a limited edition of 1,600 bottles. The Bavarian Rye Whiskey presented here hit the market in the summer of 2020. It took several years to get the formula right, and it features locally grown rye, wheat, and barley (the proportions are undisclosed). The whiskey was aged for three years in heavily charred American oak barrels.
Nose: fresh, fruity, ripe apples and plums, lemon peel, cinnamon, white pepper and notes of charred oak.
Palate: sweet and spicy, vanilla, rye bread toast, baked apples, cinnamon, allspice, licorice, a pinch of pepper and oak.
Finish: medium long, with notes of wholemeal, vanilla, anise, white pepper and charred oak.
