Eimverk Distillery, the first and so far only Icelandic whisky producer, was established in 2011 as an investment by the Thorkelsson brothers and commenced distilling in August 2013.
Of the 100,000 litres of distillate produced annually, around 50% is whisky. The brewery uses only locally grown organic barley (supplied by three farms), which is malted on site. Eimverk experiments a lot, and the result of one of these experiments is the Flóki Birch Wood Finish presented here. It is a young single malt finished in birch wood. We are not entirely sure whether the finishing took place in birch barrels (birch wood is very porous and leaks) or (as the counter-label suggests) in traditional oak barrels, in which toasted birch slats were placed.
Nose : young and fresh, barley malt, birch bark, potpourri, white pepper, traces of licorice, balsamic vinaigrette and birch beer.
Taste: pleasantly spicy, white pepper, cardamom, cinnamon, a touch of anise, nutmeg, caramel, honey and a subtle aftertaste of grass and leaves.
Finish: quite long, grassy and spicy, with a bit of dried fruit, caramel, birch sap and a mixture of spices.
