Skibbereen Eagle is a whiskey brand from the West Cork Distillers Co portfolio.
The distillery was built in 2003 by John O'Connell and Dennis and Ger McCarthy in Union Hall, and after ten years it was moved to Skibbereen, where it operates to this day, distilling malt and grain whiskies and creating its own blends. West Cork is based on locally grown grain, distillation takes place in copper stills, and every drop of spirit is distilled three times. The blended whiskey presented here is a blend of malt distillates aged in sherry casks and grain distillates aged in first-fill bourbon casks. The name of the whiskey is most likely a nod to the once popular weekly Skibbereen Eagle, taken over in 1929 by the rival Southern Star.
Nose: sweet cereals, caramel, vanilla, honey, sweet bread, pralines, raisins, peaches, cocoa, cinnamon and oak.
Palate: honey cereal, vanilla, caramel, apple pie sprinkled with cinnamon, allspice, notes of licorice and oak.
Finish: medium long, with notes of cereal, vanilla, allspice, dried fruit and oak.
