Fred Laing's XOP series debuted in 2014, a dozen or so months after the division of Douglas Laing & Co.'s assets between the two Laing brothers.
XOP stands for Xtra Old Particular and refers to the finest single malt and single grain casks from the family’s stockpile. This Glen Spey 21 years old was distilled in January 1997 and aged for over two decades in a refilled hogshead cask DL 12952. Bottled in November 2018 at cask strength (51.1% abv) in a limited edition of 356 bottles, Glen Spey Distillery has been producing whisky since 1878. It is now owned by Diageo and has two pairs of stills that can produce 1.5 million litres of distillate per year.
Aroma: sweet barley malt, vanilla, milk fudge, milk chocolate, apples, coconut flakes, forest floor, a touch of white pepper and oak.
Taste : vanilla cream, honey, maple syrup, toffee, milk chocolate, sponge cake, baked apples, gooseberries, notes of cinnamon and lemongrass.
Finish : long and sweet, with notes of vanilla, caramel, toffee, milk chocolate, hay and oak.
