Tap Whiskey Company is a somewhat mysterious producer of Canadian whiskey based in Kentucky.
The whisky comes from the “oldest distillery in Western Canada,” distilled multiple times and aged in first, second, and third-fill American white oak barrels. Canadian law allows the addition of foreign beverage (usually sherry, port, or fruit juices) to whisky in amounts not exceeding 9.09%, and Tap Whisky Company takes advantage of this regulation. The rye whisky presented here was aged for eight years in American oak barrels and finished in Amontillado sherry barrels. During the final blend, sherry was also added in the legally permitted amounts.
Nose : delicate notes of sherry, milk fudge, maple syrup, walnuts, raisins, apricots, rye bread, notes of pencil shavings and oak.
Palate: brown sugar, maple syrup, vanilla, cotton candy, milk chocolate, roasted almonds, candied ginger and oak.
Finish : medium long, with notes of sherry, milk chocolate, caramel, sugared nuts, ginger and oak.
