Based in Orkney, Highland Park is Scotland's most northerly distillery.
Although the official date of commencement of production is considered to be 1798, previously local businessman and smuggler Magnus Eunson had been illegally producing whisky on the premises. The plant still produces malt to this day, which covers around 30% of demand. Highland Park uses local peat, which differs significantly from that extracted on Islay and on the mainland. Few trees grow on Orkney, so the main ingredients of the local peat are mosses, ferns and heather, and they have a significant impact on the aromatic and flavour palette of the whisky. The whisky presented here, distilled almost 60 years ago, is Orcadian nectar from the times when Highland Park belonged to the Highland Distillers company, the taste of which is remembered today by only a select few.
Nose: slightly oily, lots of peat, baked bread crust, apples, oranges, dark chocolate, walnuts, hay, licorice, a bit of cinnamon and anise, all wrapped in peat smoke.
Taste : very complex, cherries, oranges, raisins, honey, sugared nuts, dark chocolate, cinnamon, cloves, licorice, a handful of fresh herbs and peat smoke in the background.
Finish: quite long, where fruity, nutty and spicy notes persist in beautiful harmony.
