Peat's Beast single malt debuted in August 2011 in the Fox Fitzgerald Trading Company offering.
The company does not disclose the origin of the whisky, leaving it up to the consumer to solve this mystery. Fox Fitzgerald was founded in 2010, and is currently owned by Eamonn Jones and Aidan Smith. In the past, both worked for Whyte & Mackay, and to this day, the local blender, Richard Paterson, signs the tasting notes for their whiskies. One of the distilleries belonging to Whyte & Mackay is Jura, which we know from time to time distills from malt with a high content of phenol compounds. Of course, this is just one of the hypotheses regarding the origin of Peat's Beast. The cask strength edition presented here contains whisky finished in Pedro Ximénez sweet sherry casks.
Nose : peat smoke, seaweed, forest floor, raisins, dried figs and dates, plums, toffee, caramel, maple syrup and a hint of burnt oak.
Taste: smokey-fruity, figs, dates, cherries, raisins, vanilla, caramel, honey, milk chocolate, a hint of cinnamon and cloves.
Finish : quite long, smoky, with notes of caramel, milk chocolate, rum-soaked raisins and a pinch of cinnamon.
