In the 1990s, The Macallan was often referred to as the Rolls-Royce of single malt whiskies.
The distillery placed great emphasis on the quality of the casks, ordering them from coopers in Jerez and then leasing them to bodegas producing Oloroso sherry for two to three years. After that, the casks were transported in their entirety to Scotland. The Macallan's standard editions were typically blended from 70% first-fill cask-aged stills and 30% second-fill stills. The Macallan 10 year old Full Proof (57% abv) presented here is, in our opinion, from the 1980s.
Nose: strong sherry notes, bitter oranges, dried plums, black cherries, raisins, honey, cinnamon, cloves, a pinch of pepper, toasted almonds and a distant trace of smoke.
Palate: sherry dominated, dark chocolate, toffee, almonds and hazelnuts, candied orange peel, raisins, prunes, traces of nutmeg and cinnamon.
Finish: long, dark chocolate, candied orange peel, toasted almonds, a hint of cinnamon and sherry-soaked oak.
