John Philip (JP) Wiser, a Dutch immigrant, began distilling whisky in Prescott, Ontario, in 1857. By the turn of the century, Wiser was the country's third largest producer and the first to call his product "Canadian whisky."
Shortly after his death in 1917, the company fell into financial trouble and was taken over by H. Corby Distillery Co. Today, J.P. Wiser's is produced by Pernod Ricard's Corby Distillers at the Hiram Walker Distillery in Windsor, Ontario. The one presented here was distilled from a mash of 62% rye (the other grains were wheat and corn) and aged in three types of barrels - fresh bourbon barrels, virgin oak barrels and barrels that had previously matured Canadian whisky.
Aroma : pumpernickel, linseed, caramel, vanilla, ground pepper, a hint of cinnamon, roasted peanuts and a trace of cedar.
Palate: toasted rye bread, vanilla, milk fudge, maple syrup, pepper, a hint of leather and a light bitterness of oak.
Finish: medium long, sweet and spicy, with notes of caramel, pepper, ginger and oak.
