Bacoo is a character from Caribbean folklore. It is a malicious, resembling the Irish leprechaun a bit, spirit often living in empty rum bottles washed onto the shores by the waves of the Caribbean Sea. Whereas rum Bacoo, which was named after that folklore character, is a spirit manufactured in the Dominican Republic. It is made from fresh sugar cane juice, which puts it in the same category as rhum agricole from Martinique. It is manufactured at the same sugar cane plantation where the raw material is grown, matured in situ and bottled down the road. The whole production process takes place within a few miles. Bacoo 7 Years Old is a rum made from fresh sugar cane juice, matured for 7 years in American oak ex-bourbon barrels.
Nose: Vanilla, buttery cream, banana syrup, molasses.
Palate: Vanilla, banana cream, coffee with cream, a hint of bitterness.
Finish: Medium long, warming.
