Hinch Whiskey debuted in 2019 in the Hinch Distillery Company range.
It is based on the Killaney Estate in the town of Ballynahinch, south of Belfast. The company planned to open its own distillery in November 2020, but the date was postponed due to the COVID-19 pandemic (the official opening of the distillery took place on March 31, 2021). That year, the company introduced the "Craft & Casks" triptych, a set of three whiskies finished in craft beer barrels (Imperial Stout Finish, Irish Red Eye Finish and Rye Export Stout Finish). The Imperial Stout Finish presented here comes from the second batch released in early 2023. The 4-year-old blended whiskey, made from 25% malt and 75% grain distillates, was finished in stout barrels from Whitewater Brewery based in County Down. The alcohol content was increased from 46.4% abv.
Aroma: milk fudge, vanilla, red apples, cherries, cocoa powder, walnuts, cinnamon, cloves and nutmeg.
Palate: dark chocolate, maple syrup, toffee, vanilla, candied nuts, cinnamon, allspice, hints of licorice and oak.
Finish : medium long, with notes of coffee, toffee, red berries, black pepper, cinnamon and oak.
