Starward Distillery was founded by David Vitale in Melbourne in 2008. In October 2016 the company moved to the new location after being given substantial cash injection from Distill Ventures, subsidiary of Diageo.
The investment allowed increasing production to 250,000 liters of spirit per annum. Recently the distillery started their experimental project in order to create some out of ordinary flavors. Here we have something extraordinary, Starward single malt whisky distilled in 2017, aged in Apera and red wine casks and finished in ginger beer cask, the formula of which was loaded with citrus peel and fresh ginger.
Nose: orange peel and ginger, milk chocolate, honey, raisins, prunes, mixed fresh herbs and hints of lime juice.
Palate: lots of ginger, grapefruits, blood oranges, sour grapes, plums, cherries, chocolate, hints of caramel and oak.
Finish: not too long, with notes of ginger, milk chocolate, white pepper and oak.
