Whistler Whiskey debuted in early 2017 from the Irish Boann Distillery, based in Drogheda, County Meath.
Its construction began a year earlier, and the first drops of single pot still distillate flowed from the stills in December 2019. Like most small distilleries, Boann, while waiting for its distillate to finish at least three years of maturation, offers whiskey from other distilleries under its own brand. The Whistler Oloroso Sherry Cask Finish is one of three blended whiskeys in Boann's offer. It is made from triple-distilled single malt (35%) and single grain (65%) whiskeys aged for four years in ex-bourbon casks. After blending, the blend is placed in ex-Oloroso sherry casks for at least nine months.
Nose: slightly alcoholic, white grapes, lemon peel, raspberry jam, roasted peanuts, a touch of pepper, sherry and oak.
Palate : delicate notes of sherry, roasted nuts and almonds, orange peel, banana cake, raisins, coconut flakes and oak.
Finish : medium long, with notes of raisins, roasted nuts and almonds, a touch of pepper and oak.
