Oliver's Exquisito is a series of vintage rums from the Dominican Republic, from the Oliver & Oliver distillery, reactivated in 1993, continuing the traditions dating back to Cuba and the traditional rum produced there.
This in turn is connected to the Oliver family, descendants of Juanillo Oliver, a Spaniard who landed in Cuba in 1856 with the Spanish army. In 1874, instead of returning to his homeland, he decided to settle in Cuba and there devoted himself to the production of rum. In 1898, his estate fell victim to the Terra Rasa strategy and burned to the ground. Almost a hundred years later, his great-great-grandson, Pedro Ramon Oliver, discovered his ancestor's distilling legacy and, after carefully studying Juanillo's original notes, decided to continue his work. However, instead of settling in Cuba, he chose the Dominican Republic as the headquarters of his new company, where his company Oliver & Oliver has been operating since 1993.
Oliver's Exquisito 1990 is made from molasses, distilled in traditional copper stills. The maturation process takes place in the solera system in American bourbon barrels. The 1990 edition was bottled in 2020 and is limited to 2,000 individually numbered bottles.
Aroma : Molasses, dried figs, dates, dried apricots, caramel, cherries, cinnamon.
Palate: Vanilla, caramel, dried fruit, pineapples, cherries, raisins, oak, spices.
Finish: Long, notes of vanilla, oak and cinnamon.
