The Bayou rum is a product of the American distillery Louisiana Spirits, located somewhere halfway between Houston and New Orleans, in the state of Louisiana.
It made from locally grown sugar cane, or rather sugar cane molasses from the oldest sugar factory in the USA, to be more precise. It is double distilled in traditional copper pot stills, and nearly all of it matures in American oak, ex-bourbon barrels, in a solera system. Eventually, it is bottled on site. It is often referred to as a rum for the bourbon lovers.
Bayou Mardi Gras XO is a rum that was aged for up to 6 years in a solera system that was made up from American oak ex-bourbon barrels. Partially finished in ex-sherry barrels.
Nose: Stone fruits, plums, sandalwood, tobacco and dried fruits.
Palate: Orange marmalade, stone fruits, black currant, prunes, honey and a hint of smoke.
Finish: Long, with notes of black pepper, honey and sherry.
