Fattori Winery was founded in he early 20th Century by Antonio Fattori in the village of Terrossa in Soave, part of the Veneto region.
He started to produce sweet wines, which he sold to Verona’s and Vicenza’s bars and trattorias. After returning from the First World War he found his vines destroyed by phylloxera and it took him years to restore the vineyard. His grandson Antonio joined the family business in the early 1970s after completing study in winemaking. After years of experimenting with new techniques and methods he increased the area of cultivation and eliminated, almost entirely, the use of chemicals. The family vineyards are sitting between 150 and 450 meters above sea level and are divided between “White Vineyards” planted mainly with Garganega, Pinot Grigio and Sauvignon Blanc and “Red Vineyards” planted with Corvina, Corvinone and Rondinella varieties.
Motto Piane Recioto di Soave is produced exclusively with Garganega grapes dried for five to six months on wooden racks. The fermentation occurs in oak barrels (40%) and stainless steel vats (60%), where the wine matures for one year. It is excellent sweet wine, with notes of dried apricots, passion fruit, cantaloupe, juicy nectarines, acacia honey, dash of sweet spices ad touch of beeswax. Makes perfect pairing with ripe and well-seasoned cheeses. Serving temperature 12-14ºC, aging potential 60 months.
