Eden Mill, founded 2012, is Scotland’s first single site brewery and distillery, making gin, whisky and beer.
They are located in St. Andrews, famous golfing resort, very close to a site where from 1810 to 1860 the Haig family owned and operated Seggie Distillery. Eden Mill is equipped with three stills made by the Portuguese company Hoga and can produce 80,000 liters of spirit per annum. Hop Gin is a marriage of the crew (five strong) brewing and distilling skills. It is made with several botanicals including juniper berries, angelica and coriander in addition to Australian Galaxy hops, which is cold compounded after distillation giving the gin a slight yellow hue. The company currently produces five gins; they are small batch and mostly limited editions, which encapsulate the essence of St. Andrew’s four seasons. When the seasons change and different flowers bloom, herbs thrive and berries ripen so too do the ingredients that are included in gins’ formulas.
As expected Eden Mill Hope gin is very hops forward, with traditional gin components such as juniper, coriander and angelica playing supporting role. The producer recommends serving it with tonic and fresh red chili peppers.
