Founded in 2012, Eden Mill was Scotland’s first combined brewery and distillery, producing whisky, gin and beer.
The company is based in St Andrews, a famous golf resort, not far from where the Haig family’s Seggie Distillery operated between 1810 and 1860. Eden Mill is equipped with three Portuguese copper stills and has a capacity of 80,000 litres of distillate per year. Hop Gin is the result of the combined skills of five distillers and brewers. Alongside the typical botanicals of juniper berries, angelica and coriander, Australian Galaxy hops are a key ingredient, blended cold after distillation. Eden Mill currently offers five gins, all produced in small batches and offered in imitation editions. The key to these are local botanicals, flowers, herbs and berries, which are incorporated into the formula depending on the season.
As expected, the palette of Eden Mill Hop Gin is dominated by hops, while traditional ingredients such as juniper, angelica and coriander play a secondary role. The producer recommends serving it with tonic and red chili peppers.
