Dutch immigrant John P. Wiser began distilling whisky in 1857 in Prescott, Ontario. By the end of the century, he was the third largest producer in the country and the first to call his product “Canadian whisky.”
There is no trace of the original distillery, and JP Wiser's whisky is now produced by Pernod Ricard's Corby Distillers at the Hiram Walker Distillery in Windsor, Ontario. The main grain input remains corn, other grains - rye, wheat and barley are referred to as flavour elements of the finished blend. JP Wiser's 18 years old is one of the more interesting Canadian blends, it can also be called a small batch because it is released in batches of no more than 3,500 bottles.
Nose : cedar cigar box, pencil shavings, loaf of rye bread, toffee, vanilla, pepper, lemon peel, traces of ginger and cinnamon.
Palate: lots of oak and spices, ginger, bitter orange jam, cloves, milk fudge, notes of vanilla and brown sugar and a pinch of tobacco.
Finish: medium long, spicy, with notes of pepper, ginger, cinnamon and oak.
