The vast majority of whisky lovers will probably point to Glenmorangie Distillery as the pioneer of finishing maturation.
The first edition of this type hit the market in 1987 and it was the now legendary 1963 Vintage finished in Oloroso sherry butt casks . However, the real herald of the “finished” Glenmorangie was Port Wood Finish, which debuted in 1994, two years ahead of the next one, Sherry Wood Finish. After 10 years of maturation in bourbon casks, the whisky spent another dozen or so months in Oloroso sherry butt casks . The new incarnation of Sherry Wood Finish has been Lasanta since 2007.
Nose : strong sherry tones, blackberries, grapes, walnuts, dark chocolate, nutmeg, delicate notes of earth and peat.
Taste: sweet and intense, caramel, toffee, vanilla cream, dried plums, baked apples sprinkled with cinnamon, delicate traces of oak.
Finish : quite long with strong notes of sherry, honey, dried fruit and traces of licorice.
