Sipsmith Distillery opened in 2009 and is the first distillery to open in London in almost 200 years.
Its founders, Sam Galsworthy and Fairfax Hall, had no previous experience with distilling, although they had worked in the spirits sector. Jared Brown, employed as a master distiller, developed the gin formula based on the 18th century book The Art of Distilling, which in its modern form consists of ten botanicals from different parts of the world - Macedonian juniper, Seville orange peel, Spanish lemon peel, Italian orris root, Belgian angelica root, Madagascar cinnamon, Chinese cassia bark, Spanish almonds and Bulgarian coriander. VJOP (Very Juipery Over Proof) debuted in late 2013 and is a tribute to juniper, without which gin would not be gin. Juniper berries are added in three batches: the first during maceration, the second goes directly to the still, and the third to a special container placed in its neck and exposed to alcohol vapors. The aromatic bouquet of VJOP is dominated by juniper, pine needles, notes of cedar and zesty orange; in the palette a powerful load of juniper and notes of spices and dark chocolate. The producer recommends serving it in its natural form or in Martini or Negroni cocktails.
