Sonoma County Distilling Company is an investment by Adam Spiegel from 2010. Adam has previously "collaborated with distinguished masters of distillation and blending."
Almost every phase of production is done in-house, from milling the grain, to mashing, fermenting, distilling in copper pot stills, maturing and bottling. Adam avoids genetically modified grains and relies on locally grown grains. The barley, imported from Wyoming, is malted locally using Californian cherry wood. Sonoma County Rye is distilled from a mash of 80% California and Canadian rye and 20% malted rye imported from the UK. Maturation takes place in charred American oak barrels for a minimum of 15 months and typically exceeds two years.
Aroma: fresh wholemeal, vanilla, caramel, cinnamon, white pepper, dill, apple cider, oak chips and freshly cut grass.
Taste: slightly spirituous, rye bread toast, caramel, vanilla, cinnamon, cardamom, fresh herbs and grilled artichokes.
Finish : medium long, with notes of pepper, anise, dill, caramel, cinnamon and oak.
