Abasolo Mexican Whiskey is crafted and distilled from the finest, non-GMO Cacahuazintle corn, which has been cultivated by local farmers in Mexico for over 200 generations. The production process involves the ancient corn preparation technique of nixtamization, a 4,000-year-old cooking technique that brings out deep, complex flavors like honey, vanilla, and leather. It is then twice distilled in copper pot stills and aged in new and old barrels. Abasolo Mexican Whiskey is perfect for sipping neat or using in cocktails.
Destileria y Bodega Abasolo was founded in 2019 by Dr. Ivan Saldana, it is the first distillery dedicated to the production of Mexican whiskey. It is located in the city of Jilotepec de Abasolo, considered the cradle of corn in Mexico, at an altitude of 2,377 meters above sea level, making it one of the highest distilleries in the world. The distillery uses only non-GMO Cacahuazintle corn.
