Gouden Carolus whisky debuted in 2008 in the offering of Charles Leclef, owner of the Het Anker brewery in Belgium.
Leclef used the mash used to make Gouden Carolus Tripel Beer, excluding hops from the formula. His whisky was very well received and two years later he built a new distillery on the Molenberg family estate in Blaasfeld, equipped with traditional copper stills. The rule is a two-phase maturation of the distillate – for about 30 months in fresh bourbon barrels, then at least 6 months in so-called Anker casks (regenerated and re-fired barrels). The edition presented here deviates from the rule, using whisky aged in American oak barrels from Madeira.
Nose: fruity and nutty, oranges, peaches, raisins, honey, caramel, milk chocolate, roasted peanuts and a hint of oak.
Taste: true to the aroma, caramel, milk chocolate, vanilla, sugared nuts, cherries, blood oranges, raisins and a pinch of cinnamon.
Finish: medium long, with notes of milk chocolate, caramel, nougat, dried fruit and a hint of sweet spices.
