Its history dates back to 1921, when it first appeared on the market. Named after the Benedictine monk Dom Pierre Pérignon, who, although he did not invent champagne, had a huge influence on its production using the methods we know today. With undisguised passion, he explored the secrets of wine production known since the Middle Ages, while searching for ways and methods to improve them. His achievements include the production of wine from different grape varieties, harvesting at the right time of year, and even something as trivial as a cork, because at that time bottles were closed only with a piece of jute and tied with hemp rope.
Dom Pérignon was the first widely available Champagne in the cuvée de prestige category. It is also a vintage Champagne, so all the grapes used in its production must be from the same vintage. It is worth noting that in years when the harvest is of lower quality than required, Dom Pérignon is not produced.
The 2008 vintage was very successful, with the vines growing at a steady, balanced pace, delivering large and plump grapes, and the hot weeks before the harvest gave this champagne its character. It matured in the cellars in Èpernay for almost 12 years. It has a deep colour with delicate amber reflections. On the nose, it captivates with aromas of red fruits, which are underpinned by notes of orange, hay and a touch of cocoa. On the palate, it is smooth and velvety, pleasantly sparkling, full of lively fruit notes, but also with nuances of blood orange peel and ripe yellow fruit. On the finish, long with an accent of green citrus, which accompany notes of licorice and bitter blood orange.
Perfect as an aperitif, for those who like a more assertive champagne character. Thanks to the fact that despite its freshness, it has a full body, it is not afraid of culinary combinations, even the more daring ones.
