Claudio Quarta Vinaiolo was founded in 2005 when Claudio, a long-time laboratory researcher with many successes and an excellent reputation, decided to abandon his career in the United States and return to Italy, purchasing the three vineyards that are now part of the company. Tentue Emera, the largest of them, has 80 hectares, of which 50 are vines, Cantina Sanpaolo and the smallest, the boutique Cantina Moros in Guagnano.
The Moros winery is the pride of its owners, and at the same time an extraordinary place, which, in addition to bottles of wine, is full of various types of exhibits related to wine production, but not only that. The winery itself was created by revitalizing an old factory from the 1950s. The work was completed in 2012 and that year was also the first vintage of Salice Salento wine, which immediately won critical acclaim, especially in the United States.

Wine made from the Malvasia Nera and Negroamaro grapes, produced in a limited quantity of 6,000 bottles per year. After the vinification process, it matures for 12 months in oak barrels, of which 75% is French oak and the remaining 25% American oak. In the nose it is very complex and full, harmoniously developing aromas of ripe cherries and berries, supported by accents of chocolate and licorice. On the palate it is round and full, gracefully combining fruit flavors with fleshy but elegant tannin, balanced acidity and well-integrated alcohol. The finish is long and intense, with a lot of spicy notes.
It tastes best when served at a temperature of 16-18 degrees. Decanting is recommended before serving to ensure the wine has the optimum level of aeration, which will allow it to show its full strengths. In culinary combinations, it works well with heavier meat dishes, good game, roast lamb or high-quality cold cuts and cheeses.
