Bimber Distillery, based in West London, has been operating since 2016.
It was founded by Dariusz Płażewski, a Polish emigrant whose grandfather produced moonshine himself during the Polish People's Republic alcohol rationing. This small distillery uses barley from a single farm, malted in a traditional way and uses an extremely long, 148-hour fermentation. The single malt moonshine debuted in September 2019 and the first edition sold out in a few hours. The fourth small batch edition presented here hit the market in March 2023 and contains whisky aged in first-fill bourbon barrels (American oak) and bottled at 51.2% abv, natural color and without cold filtration. 7,000 bottles went on sale.
Nose : barley malt, vanilla, honey, brown sugar, peaches, grapes, apples, mango, pineapple, coconut flakes, pralines, white pepper and a hint of oak.
Palate : buttery croissant, vanilla, honey, milk fudge, golden syrup, apples, pears, peaches, grilled pineapple, notes of pepper, ginger and oak.
Finish : medium long, with notes of sweet bread, vanilla, caramel, ripe summer fruits, a pinch of pepper and oak.
