West Cork Distillers is an investment by three friends – John O'Connell and brothers Denis and Gerard McCarthy – in 2003.
In 2014, the distillery moved to Skibbereen, and now occupies over 12 acres of land, with eight stills and two stills producing 4.5 million litres of spirit per year. West Cork offers blended whiskey, single malt, single pot still and gin (the latter accounting for just 5% of the company’s turnover), available in 70 countries. This 7-year-old, triple-distilled single malt was aged in first-fill sherry casks for four years, then finished in fresh bourbon casks for a further three. The whiskey was bottled at natural colour, without chill filtration.
Nose: delicate notes of sherry, strawberries, raspberries, plums, raisins, milk chocolate, vanilla, caramel, a touch of cinnamon and fresh herbs and oak.
Palate: fruity-sweet, strawberries, forest berries, dried plums, peanut butter, milk chocolate, cinnamon, black pepper and charred oak.
Finish: medium long, with notes of dried plums, raisins, cocoa, pepper, cinnamon, licorice and oak tannins.
