Product description
Copper Fox Distillery, located in Sperryville, Virginia, was built in 2005 by Rick Wasmund.
The facility is equipped with two small stills and also has a small malt house where the barley grain is malted using fruitwood and oak. Copper Fox Rye is distilled from a mash of 2/3 locally grown rye and 1/3 malted barley, of which 60% is smoked with applewood and 40% with cherrywood. The distillate is aged in refill bourbon barrels, in which charred applewood and oak bags are hung, then finished in second-fill bourbon barrels. After 12 months of combined maturation, the whisky was bottled without chill filtration on March 15, 2012.
Nose: fresh hay, grilled artichokes, burnt fruit wood, lapsang souchong tea, white pepper, turmeric, lemon peel and caramel.
Palate: baked apples, wholemeal, brown sugar, cinnamon, cumin, black pepper, lemongrass, licorice, charred wood and a hint of pine needles.
Finish : medium long, with notes of applewood smoke, black pepper, nutmeg and mint.
