Whiskey Proclamation debuted in the summer of 2020 from ITUT (Inis Tine Uisce Teorata), an Irish company based in County Mayo founded in 2017.
The whisky commemorates the 1916 Proclamation of Independence for Ireland and the people who helped make it happen. “The Proclamation is a blend of the finest grain whiskeys from across Ireland, triple distilled and aged in ex-bourbon casks, and a small amount of malt whiskey finished in ex-sherry casks.” The company does not disclose the details of the blend’s formula or the distilleries from which the ingredients are sourced. The presentation of the whiskey is certainly eye-catching, reflecting the attributes of the original document.
Nose : ripe pears and apples, nectarines, toffee, crème brûlée, vanilla pudding, cappuccino, notes of cinnamon and oak.
Taste : yeast cake, milk fudge, sweet cereals, coffee with milk, peaches, mirabelle jam, vanilla and toasted oak.
Finish : medium long, soft, with notes of cereal, vanilla, caramel, sweet bread and oak.
