M&H (originally Milk & Honey) Distillery was established in 2013.
The distillery is based in Tel Aviv and is the first Israeli producer of whiskey (kosher, of course). Its production capacity is 800,000 liters of distillate per year (currently used at 25%). In the early years, the distillery was advised by Dr. James Swan († 2017), one of the most distinguished independent master distillers. Due to the temperatures reaching 40ºC in summer, the distillates mature much faster than in Scotland, but this is at the cost of an increased so-called "Angel's share". The M&H Apex Batch # 003 presented here is a whiskey distilled on August 31, 2017, aged in bourbon and reconditioned barrels, finished in 400 liter cognac barrels. The whisky was bottled at cask strength 59.4% abv on October 14, 2020 in an edition of 1,077 bottles.
Aroma: malty and fruity, peaches, apricots, grapes, apple bun, honey, vanilla, cinnamon, cloves and a handful of fresh herbs.
Taste : consistent with the aroma, apples, nectarines, peaches, mirabelle plums, caramel, lemon pepper, cinnamon, allspice, notes of candied ginger and mint.
Finish: medium long, with notes of summer fruits, sweet bread, mixed herbs, a pinch of pepper and oak.
