The Cartavio line of rums has been produced in Trujillo, Peru by Destillerias Unidas SAC from local molasses since 1929.
The company uses a combination of different distillation methods, both column and copper stills. Cartavio XO Rum is matured using the solera method from distillates that have matured in European and American oak barrels before being finally blended and bottled at 40%. When the blender created this rum, he used oak barrels from France, Slovenia and the USA to help him create an interesting blend of aromas. The rum retains its dark amber color in both the bottle and the glass.
Cartavio XO Rum is a blend of rums distilled in rectifying columns (approx. 80%) and pot stills (approx. 20%). This is the most exclusive edition of all Cartavio rums. It was created to commemorate the 80th anniversary of the distillery. In its bouquet we find accents of caramel, fruit, vanilla, oak, cherry, honey, chocolate, cocoa, toffee and spices.
