Balcones Distillery was built by Chip Tate in Waco, Texas in 2008 (Chip designed the still himself and welded it).
Its product range includes corn whisky (distilled from blue Hopi variety), bourbon and single malt. Balcones Baby Blue was the first whisky made in Texas since the Prohibition. It is double distilled in copper pot stills from roasted heirloom blue corn sourced from New Mexico and aged in used 5-gallon barrels for unspecified period of time (small barrels and hot and humid weather conditions notably expedite maturation process). Since its debut Balcones Baby Blue Corn Whisky scored over 30 international awards and medals, on the European market however, it is marketed as ‘Corn Spirit’.
Nose: buttered popcorn, vanilla, caramel, toffee, roasted nuts, sweet pastries, hints of cinnamon, nutmeg and freshly ground coffee.
Palate: vanilla, apricots, oranges, candied lemon peel, corn bread, brown sugar, cotton candy, honey-roasted nuts and dash of cinnamon.
Finish: medium long, with notes of vanilla, roasted nuts, tobacco, hints of leather and oak.
