Depaz brand was created on the estate of the first governor of Martinique, Jacques Duparquet, on a farm founded in 1651.
It was initially used to cultivate tobacco, legume plants and breed livestock, but quite soon it turned towards sugar cane plantation and, consequently, rum manufacturing. The estate gave rise to the town of Saint Pierre, which in time became the world’s largest rum port. However, on 8th May 1902, the nearby volcano Mount Pelée erupted, wiping out the estate and the entire town of Saint Pierre. Victor Depaz, a member of one of the families cultivating sugar cane and making rum there, was getting his education in France at the time. This made him the only survivor, but also made him return to Martinique, to the original site and try to re-establish sugar cane plantation and rum making on the land that belonged to his family. This came to fruition in 1917, only 15 years after the fatal eruption. Today, Depaz distillery is still one of the smallest production units on Martinique. It is also a unique one, with an old steam engine operating the mills necessary to ground the sugar cane. Distillation takes place in column stills, and the main raw material from which rum is made in fresh sugar cane juice.
Depaz Port Cask Finish is a rum matured for at least 8 years in American oak ex-bourbon barrels, and then re-racked into ex-port barrels for another 11 months.
Nose: Oak, vanilla, chocolate, ripe fruits.
Palate: Oak, vanilla pastry, chocolate, port, hazelnuts, dried fruits, cocoa and rose jam.
Finish: Long, with notes of jasmine, coffee and plums.
